This is a wonderful cookbook for people like me who are busy but really want to try cooking vegan without having to make a lot of changes in my pantry and purchase new products that aren't easy to find. The recipes in the book are much easier to put together than other books that I have seen that feature vegan cooking -although I am sure there are many. Or maybe, it is simply the way the book is written, In any event, this cookbook demystifies the art of vegan cooking for me.There is also something very special about this book. In part, I think, because the author shares some very touching parts of her life in a style that is simply good reading. And in part maybe because she invites us into her life with her husband Danny and shares enough about them that it is clear that these are two very genuine and kind young people who walk the talk and value a simple and healthy way of life - and so you know you can believe in the goodness of her recipes.There are also a number of suggestions and points on how to save money and the recipes are fabulous.I was so impressed by this cookbook that I bought a copy for my sister-in-law and she is now a fan too - so we have decided it will be fun to get together and try some of these recipes together. And I am about to send another one to a dear friend who I know will enjoy it because it is much more than a simple cookbook.
